Preparation Time 10 minutes Cooking Time 30 minutes Serves 4-6 Ingredients: 500 g lean pork mince 1 onion, finely chopped ½ cup parsley, finely chopped ½ cup semi dried tomatoes, finely chopped 10 basil leaves, finely chopped 1 egg 2 tblsp olive oil 500 g tomato pasta sauce Freshly cooked spaghetti to serve Shaved parmesan to serve Basil leaves to garnish Cooking Instructions: 1. In a large bowl combine the pork mince, onion, parsley, semi dried tomatoes, basil leaves and egg. Mix well. 2. Shape the mixture into golf ball sized balls. 3. Heat the oil in a large non-stick frying pan over medium heat and brown the pork balls evenly on all sides. Remove and set aside. Continue until all pork balls are browned. 4. Return all pork balls to the pan and pour over pasta sauce and simmer for a further 10 minutes. Stir occasionally. 5. Serve over hot freshly cooked spaghetti, garnish with parmesan cheese and basil leaves. Note: Grated carrot and zucchini can be added to this recipe if you need to hide the vegetables for the kids.

Mediterranean style lamb burgers Serves: 4 • Preparation time: 15 minutes • Cooking time: 10 minutes Ingredients 500 g lamb mince 4 shallots, finely chopped 1 tbsp ground cumin 1 tsp dried oregano 2 tbsp semi-dried tomatoes, chopped 4 rolls, halved horizontally, toasted baby rocket leaves small tub hummus extra 2 tbsp semi-dried tomatoes, thinly sliced flat-leaf parsley leaves Method 1. Combine the lamb mince, with the shallots, cumin, oregano and semi-dried tomatoes. Mix lightly, and shape into 4 burgers. 2. Preheat the barbecue flat-plate or pan to moderately-high. Lightly brush the burgers with oil. Add burgers to the barbecue or pan, lower the heat to moderate. 3. Cook for 6-7 minutes each side or until thoroughly cooked. Turn them once only. Serve the burgers on the toasted rolls with rocket leaves, hummus, extra semi-dried tomatoes and parsley. Tips-Burgers should always be thoroughly cooked. Burgers should not be served rare or pink. A good guide is to insert a skewer into the thickest part; if it is ready to eat the juices will be clear. Freeze mince you don’t intend to use. Uncooked mince can be frozen for 2-3 months. Rather than freezing loose mince in roundish shape as bought from the butcher lay it out flat to freeze. Thaw frozen mince (and any meat) in the fridge, on the lowest shelf below and or away from any ready to eat food. And only thaw in the microwave if using the mince immediately thereafter.

Grape & Haloumi Salad - Try this tasty salad - print from the pop up box (change text size to larger) 150g Mesculin mixed salad leaves and fresh herb sprigs 200g sweet white seedless and crimson seedless grapes 250g Haloumi Cheese 5 tablespoons olive oil and lemon juice 1. Toss together the salad leaves, fresh herb sprigs and grapes, then transfer to a large serving platter. 2. Thinly slice the Haloumi cheese. Heat a non-stick frying pan, add the sliced haloumi and cook each side briefly until it starts to turn golden brown. 3. Arrange the fried cheese over the salad. Pour over the oil and lemon juice and serve immediately while the cheese is still hot. Tip: Choose grapes that are well coloured for their variety, plump and firmly attached to their stems, which should be green in colour. Green grapes should have a yellowish hue and red grape are at their best when deeply coloured.
